[2] 1 cup granulated sugar
[1/2] 1/4 cup quick cooking oats
[2] 1 cup all-purpose flour
[1/2] 1/4 cup cold water
[2] 1 egg
[1-1/2] 3/4 cup canned applesauce
[1] 1/2 cup chopped raisins
[1/2] 1/4 cup finely chopped nuts (opt)
[1-1/2] 3/4 tsp baking soda
[1-1/2] 3/4 tsp salt
[1/2] 1/4 tsp baking powder
[1] 1/2 tsp ground cinnamon
[1] 1/2 tsp ground nutmeg
[1/2] 1/4 tsp ground cloves
Heat oven to 350°F for metal pan and 325°F for glass. Generously grease [9x13"] 8x8x2" pan and dust with flour. Measure all ingredients into large mixer bowl. Blend ingredients on low speed 1 min, scrape down and blend 1/2 min longer. Beat 2 1/2 min on highest speed, scraping bowl 3 times. Pour batter into pan; bake 50 min or until center springs back when pressed lightly with finger [may require less time]. Cool cake in pan on wire rack 10 min. Turn out onto rack. When cool, sprinkle with confectioners sugar or frost with cream cheese frosting if desired. To serve, cut into 2" squares. Cake may be returned to pan for frosting, storing, and easy cutting.
Good recipe - not too sweet, especially if you don't frost it - I used to make this when our 3 kids were home, but always doubled or even tripled, as it went really fast!
